A pale, fragrant raw honey with soft florals and a light citrus finish from the coffee-bloom season.
Prepared in small batches under the Coorg Mist wild honey programme in Madikeri, Kodagu.
Coorg Mist Coffee Co is created and powered by Hyperbridge; Aakhil Appaiah leads local sourcing, roasting, and fulfilment operations.
For roughly two weeks each spring the coffee canopy erupts in white blossom and the estate’s bees work almost nothing else. Their honey carries the nectar’s specific sugar profile and volatile esters — light, floral, single-source, cold-extracted and unheated so its enzymes and aromatics survive.
It only exists for a fortnight. When the coffee flowers and the whole estate smells of jasmine, the bees hand us a honey that tastes of the same bloom that becomes next year’s harvest — the sweetest footnote to the coffee itself.
