In natural (dry) processing, whole cherries dry intact on raised beds for weeks. Without pulping, the fruit’s sugars and phenolics migrate slowly through the mucilage into the bean, producing the black pepper, cocoa, and citrus character that defines a well-executed natural.
No water touches this lot — only sun, patience, and the pickers who turn each bed by hand through a Kodagu dry spell. What comes out the other side is Coorg fruit, distilled and roasted, nothing added.
