The Science

Milled green beans are cellared in open-sided warehouses through the June–September monsoon. Weeks of moisture-laden Malabar wind swell each seed, leach out chlorogenic acids and titratable acidity, and relax the cell walls — the bean fades from jade to pale gold and the cup turns low-acid, heavy-bodied, and woody. Cupped 80/100.

The Story

It is the coffee that survived the rain. When the monsoon takes the ghat road to Madikeri and the estate goes quiet for days, these beans sit in the wind and change — slowly, patiently, like everything worth waiting for in Coorg.
