Prepared in small batches under the Coorg Mist estate spices programme in Madikeri, Kodagu.

Fresh ginger’s pungent gingerols convert to shogaols as the rhizome dries, giving sun-dried ginger a sharper, more concentrated heat than the fresh root it came from. Whole drying preserves the oil-bearing tissue at the rhizome’s core until it is broken or ground.
Harvested from the estate’s kitchen plots and laid out to dry slow in the Madikeri sun — the same rhizome that goes straight from field to the estate’s own kashaya pot.
