Hand-cut cinnamon bark brings honeyed warmth to desserts, tea, and slow-cooked dishes.
Prepared in small batches under the Coorg Mist estate spices programme in Madikeri, Kodagu.

Cinnamon’s warmth comes from cinnamaldehyde, an aromatic compound concentrated in the inner bark and released as the peeled strips cure and curl in the shade. Wild forest cinnamon carries a rougher, more resinous profile than plantation cassia, closer to the tree it was stripped from.
Cut from understorey trees growing wild at the forest edge of the estate, not planted rows — bark peeled by hand and left to dry slow in the shade the coffee itself depends on.
