Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.

Liberica’s oversized, irregular bean and low-grown genetics make it the outlaw of the three commercial species. Sealed in oxygen-free tanks, resident yeasts drive an anaerobic fermentation that throws off esters — the jackfruit, plum, and star-anise notes are fermentation metabolites, not additives.
Most estates rip Liberica out. We fermented it instead. The result tastes like nothing else on the plantation — divisive, jackfruit-loud, unmistakably itself — and that is exactly why it stays.
