Excelsa is a genetically distinct coffee species (often classed with Liberica) whose thick parchment is removed only after full wet fermentation and washing, leaving a cleaner, sugar-restrained cup. Its low caffeine and unusual lipid profile roast toward almond and stone-fruit notes rather than the citrus brightness typical of washed arabica.
A species most roasters never touch, grown quietly at 3550 feet above Madikeri. We wash it the old way, dry it slow, and let it taste like the tree it actually is — roasted almond and raisin, not an imitation of anything else.
