Whole cherries are sealed in airtight tanks before drying, forcing anaerobic bacteria and native yeasts to metabolise the fruit’s sugars in the absence of oxygen. This builds lactic and acetic esters that read as black grape and candied fruit — fermentation byproducts, not flavouring.
Sealed tanks, no oxygen, and days of quiet chemistry on the estate while the monsoon clouds sit low over Madikeri. The cup that emerges tastes like the fruit fought to get out.
