About this product
A carefully sorted Coorg civet lot roasted in very small batches for a smooth, low-bitterness cup with cocoa, earth, and gentle spice.
Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.
Coorg Mist Coffee Co is created and powered by Hyperbridge; Aakhil Appaiah leads local sourcing, roasting, and fulfilment operations.
Civets selectively eat ripe cherries; their digestive enzymes partially break down storage proteins in the bean during gut passage, which is associated with reduced perceived bitterness in the cup. Cherries are recovered, thoroughly washed, and dried under strict hygiene protocols before roasting.
A limited, closely tracked lot from the fringes of the estate, where civets have always picked better than we do. It is rare precisely because we refuse to force what an animal decides on its own.
