Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.

Freshly picked cherries are flash-frozen to −18 to −40 °C before processing. Ice crystals rupture the fruit’s cell walls, so on thaw its sugars and aromatic precursors bleed into the seed under tight control — a slow, cold analogue to fermentation that builds melon, candied berry, and nutmeg.
An experiment that refused to fail. On a cold Kodagu morning someone asked what would happen if we stopped the cherry in time instead of racing it — and the freezer answered with a cup that tastes like fruit held at its peak, forever.
