Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.

Honey process removes the cherry skin but leaves some or all of the sticky mucilage on the parchment during drying. That mucilage is rich in residual fruit sugars, which slowly concentrate onto the bean and lift florality and citrus-zest brightness without a full natural fermentation.
Half-stripped, sun-dried, sticky with its own sugar — this lot sits between washed and natural on purpose. It is the estate’s answer to a simple question: what if we just let the fruit linger a little longer.
