Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.

A shorter, cooler anaerobic ferment restrains yeast activity, preserving brighter, lighter ester compounds rather than pushing toward heavier tropical notes. Light roasting locks in these delicate citrus and milk-fruit aromatics before Maillard browning can flatten them.
We pulled this tank early, before the ferment could get greedy, and roasted it pale to keep every bit of that first-light citrus intact. It is the gentlest thing to come off the estate this season.
