Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.

Extended anaerobic fermentation in sealed tanks lets specific yeast strains metabolise cherry sugars into tropical, high-ester aromatic compounds. The passion fruit and citrus character is a genuine fermentation metabolite profile, shaped by tank temperature and dwell time — not an additive.
This tank sat the longest of any lot on the estate, fermenting through cool Kodagu nights until it stopped tasting like coffee and started tasting like something stolen from an orchard. We roasted it before anyone could talk us out of it.
