Prepared in small batches under the Coorg Mist micro-lots programme in Madikeri, Kodagu.

A longer, warmer anaerobic ferment drives deeper yeast activity on the cherry’s sugars, producing a heavier-bodied cup with pronounced ester-driven pineapple and citrus notes. The medium roast retains more of these fermentation-derived aromatics than a lighter development would.
Heavier tanks, heavier cup — this is the lot that came out dense and loud, tasting of pineapple pulled straight off a Kodagu roadside stall. Estate hands call it the one that misbehaves in the best way.
